Goose Leg Mississippi Pot Roast
This recipe transforms tough goose legs and thighs into a fork-tender, flavorful dish with minimal effort. The classic Mississippi Pot Roast flavors, tangy, savory, and a little bit spicy.
Ingredients:

3-4 pound Goose legs and thighs

1 tablespoon olive oil (or other neutral oil for searing)

1 (1 oz) packet ranch seasoning mix

1 (1 oz) packet au jus gravy mix

1 (16 oz) jar whole pepperoncini peppers, with about 1/2 cup of their juice

1 stick (1/2 cup) unsalted butter
-
Salt and freshly ground black pepper to taste
Equipment:

Large skillet or Dutch oven (for searing)

6-quart (or larger) slow cooker
Instructions:

Pat the Legs and thighs completely dry with paper towels. Season generously with salt and black pepper on all sides.

Heat the olive oil in a large skillet or Dutch oven over medium-high heat until it shimmers. Carefully place the goose meat in the hot oil and sear on all sides until well browned, about 3-4 minutes per side. This step creates a delicious crust and locks in flavor.

Carefully transfer the meat to your slow cooker.

Sprinkle the entire packet of ranch seasoning mix over the meat.

Sprinkle the entire packet of au jus gravy mix over the meat.

Arrange the whole pepperoncini peppers around and on top of the meat.

Pour about 1/2 cup of the juice from the pepperoncini jar over the meat.

Cut the stick of butter into several pats and place them on top of the meat.

Cover the slow cooker with its lid. Cook on LOW for 8-10 hours or on HIGH for 6-7 hours. The goose is done when it is incredibly tender and can be easily shredded with two forks. Avoid opening the lid frequently during cooking, as this lets out heat and extends the cooking time.

Once cooked, carefully remove the legs and thighs from the slow cooker (you can do this right in the slow cooker if it's large enough). Using two forks, shred the meat directly in the pot, allowing it to mix with the delicious cooking liquids. Remove any bones and tendons that have hardened

Taste the shredded meat and the sauce. Adjust seasonings if needed.
