General Tso’s Wild Turkey Sandwich

General Tso’s Wild Turkey Sandwich 

Ingredients: 

Turkey: 

1 turkey breast 

2 cups flour 

2 tbsp garlic powder 

2 tbsp onion powder 

1 tbsp ginger powder 

1 tsp chili powder

1 tsp white pepper 

½ tsp salt 

2 eggs, beaten 

3 tbsp cold milk 

General Tso’s Sauce:

1/4 cup soy sauce

3 tablespoons rice vinegar

3 tablespoons hoisin sauce

2 tablespoons water

2 tablespoons cornstarch

1/4 cup brown sugar

1 tablespoon sesame oil

1 teaspoon minced garlic

1 teaspoon minced ginger

1/4 teaspoon red pepper flakes (optional, for heat)

 

Cilantro & Ginger Slaw 

3 cups slaw mix 

½ cup cilantro 

1 tbsp fresh ginger, minced or paste 

½ cup mayo 

1 tsp cracked pepper

Fried wontons

Swiss cheese

 

Directions: 

  1. Start by butterflying the turkey breast and then cutting each filet in half. This should give you four pieces of meat to work with. Next cover meat with butcher paper and pound out flat with a rolling pin or meat mallet. (Pro tip, if you have a tortilla press, you can place the meat in a plastic bag and press in your tortilla press) 
  2. Heat 2 inches of oil in a skillet
  3. Mix flour with garlic powder, onion powder, ginger powder, pepper, salt and chili powder. In separate bowl combine eggs and water
  4. Dredge the meat in the flour, then egg wash and in flour again. Set aside and let rest 1-2 minutes. This is key for the batter to sticking 
  5. Once oil is heated fry your meat 2-3 minutes per side or until 160º internal temp is reached, set aside and let rest 
  6. While meat is frying Cook the Sauce: In a saucepan over medium heat, heat the sesame oil. Add the minced garlic and ginger, and cook until fragrant, about 1 minute. If you like a bit of heat, you can add red pepper flakes at this stage.
  7. Mix in the Base, combine the soy sauce, rice vinegar, hoisin sauce, water, and sugar. Stir until the sugar is dissolved. Bring to a simmer and cook for 2 minutes. 
  8. Slowly add the cornstarch slurry, stirring continuously, until the sauce thickens to your desired consistency, remove from heat. 
  9. Mix the slaw along with the mayo, ginger, cilantro and pepper. 
  10. Build your sandwich, on the bottom bun add slaw, drip your fried turkey in sauce, place on top of slaw followed by Swiss cheese, fried wontons and a drizzle of more sauce. Feel free to add more mayo to the bun and some green onions
  11. Enjoy.
